United States practice expects 15 to 20 percent at table service, with 18 to 20 having become the common range, and treats the payment as a substantial part of server income. Much of continental Europe rounds up or leaves five to ten percent against a wage that does not depend on it. Japan and South Korea have no tipping custom at all, and an offered tip is frequently declined.
Whether the percentage applies before or after sales tax is a further divergence: the pre-tax subtotal is the traditional base, though card terminals increasingly suggest amounts calculated on the tax-inclusive total, which raises the effective rate by the local tax percentage.
